1 pound fresh mushrooms 6 tablespoons olive oil 3/4 cup dry white wine 1 1/2 teaspoons salt 1/8 teaspoon cayenne pepper 1/4 teaspoon dried oregano 1/4 cup fresh parsley, chopped 2 tablespoons chopped onion 3 tablespoons lemon juice |

Place mushrooms in a glass or earthenware bowl.
Combine remaining ingredients in a saucepan and simmer for 15 minutes.
Remove from heat and pour over mushrooms. Cover and refrigerate for several hours or overnight. |
