4 large California Fresh Eggs* 6 ounces smoked chicken breast -- thinly sliced 2 ounces sharp Cheddar cheese -- grated 2 ounces Monterey Jack cheese -- grated 2 ounces guacamole

Prepare omelet open-faced. Arrange warmed, sliced, smoked chicken pin-wheel style over top and sprinkle with cheeses. Place under broiler to melt. Garnish with guacamole.
