Cut pork tenderloin into 1/4-inch thick slices. Quickly brown pork slices, one-half at a time, in hot oil in a wok or large skillet, stirring constantly. Remove from wok.
Sprinkle pork with salt. Reduce heat; add onion, zucchini, green pepper, carrots, soy sauce and garlic; mix well. Cook over medium heat 5-6 minutes, stirring occasionally. Return pork to wok and heat thoroughly.
