Fufu Pizza Pesto Sauce 1/4 cup sun-dried tomatoes or 1 cup fresh diced tomatoes 1 cup feta cheese 1/2 cup Parmesan cheese 4 pita breads Olive oil
In a food processor, put the basil leaves and half of the olive oil, blend well. Stop processor, add pine nuts and blend. Stop processor and add cheese, remaining olive oil, black pepper, garlic and lemon juice. Puree well. Stop and taste. If necessary, add more garlic and pepper. Keep covered and refrigerated.
To prepare pizza, spread pesto sauce evenly over pita breads, followed with feta cheese and tomatoes. Sprinkle Parmesan cheese over tops of pizzas. Bake in preheated 425 degree F oven for approximately 5 minutes, or until cheese has melted and bread is hot and slightly crispy. Sprinkle olive oil on tops, slice and serve. |
