Prepare a basic omelet by mixing eggs, milk, salt, pepper and Tabasco?. Cook in an omelet pan after melting 1 tablespoon butter. Saut? scallions and parsley in remaining butter until soft, being careful not to let butter brown. Add crab meat and lemon juice, mixing lightly. As eggs begin to set, lower heat, add crab meat mixture, cook until almost set. Fold and finish cooking. Garnish with parsley sprigs.
