2 tablespoons vegetable oil 1 large onion -- chopped 2 cups cubed peeled sweet potato 5 cups chicken broth 1/2 teaspoon dried thyme leaves 1 16-ounce can Great Northern beans -- drained 2 cups coarsely chopped cooked Butterball? Smoked Breast of Turkey 2 cups cut fresh spinach leaves

Heat oil in large saucepan or Dutch oven over medium heat. Add onion and cook 5 minutes. Add sweet, potato, broth and thyme and bring to a boil. Reduce heat, cover and simmer 10 minutes or until potato is almost tender. Stir in beans and turkey; continue heating until hot, about 10 minutes. Stir in spinach just before serving.
Makes 6 (1-1/2 cup) servings.
