Ingrediants
5 large Idaho potatoes Salt and pepper to taste 1 small onion, chopped 1/2 cup chopped celery 1 small green pepper, chopped 1 (2 ounce) jar chopped pimento 1/2 cup juice from pickle relish 1 cup mayonnaise
Preparation
Boil potatoes until tender. Cool. Peel and dice into cubes. Place in a large mixing bowl along with onion, celery, green pepper, pimento, eggs, pickle juice and mayonnaise. Stir until well blended. Chill well.
